Searing the Pork

Heat olive oil in a large pot over medium-high heat. Season the pork osso bucco with salt and black pepper. Sear the pork shanks for about 3-4 minutes on each side until browned. Remove and set aside.

Sautéing Aromatics

In the same pot, add shallots, garlic, and ginger. Sauté for about 2-3 minutes until shallots are translucent.

Adding Vegetables and Spices

Add chopped pimientos and curry powder to the pot. Cook for another 2 minutes, stirring occasionally.

Simmering the Curry

Pour in the coconut milk and return the seared pork osso bucco to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for about 1.5 hours until the pork is tender.

Cooking the Couscous

While the pork simmers, cook the pearl couscous according to package instructions. Usually, this involves boiling in salted water for about 10 minutes.

In the last 15 minutes of cooking the pork, add the Italian butter beans to the pot to heat through.
