    Prepare the Short Rib Emulsion

    In a pot, sear the short ribs in olive oil until browned. Add beef broth, salt, and pepper. Cover and simmer for about 2-3 hours until the meat is tender. Remove meat, shred it, and blend the cooking liquid until smooth to create the emulsion.

    Wrap the Burrata

    Preheat the oven to 375°F (190°C). Wrap each ball of burrata cheese with two slices of prosciutto and place them on a baking sheet.

    Bake the Burrata

    Bake the wrapped burrata in the preheated oven for about 10-12 minutes until the prosciutto is crispy and the cheese is warm.

    Prepare the Apple and Blueberries

    In a small pan, lightly sauté the sliced apple with some olive oil and honey until slightly caramelized. Add blueberries and cook for an additional 2 minutes.

    In a bowl, toss the pea shoots with olive oil, balsamic vinegar, salt, and pepper to taste.
