Prepare the Beets
Preheat the oven to 400°F (200°C). Wrap the golden beets in aluminum foil and roast them for about 45-60 minutes, or until they are fork-tender. Let them cool, then peel and slice them into wedges.

Make the Whipped Goat Cheese
In a mixing bowl, combine the goat cheese with a splash of olive oil, salt, and pepper. Using a hand mixer or a food processor, whip until creamy and smooth.

Prepare the Vinaigrette
In a small bowl, whisk together 1/4 cup of strawberry puree, 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, salt, and pepper to taste.

Assemble the Salad
In a large salad bowl, combine the arugula, roasted golden beet wedges, and toasted almonds. Drizzle with the strawberry vinaigrette and toss gently to combine. Serve with dollops of whipped goat cheese on top.
