Prepare the Porcini Butter

Soak the dried porcini mushrooms in warm water for about 15 minutes until soft. Drain and chop them finely.

Make the Butter Mixture

In a bowl, mix the chopped porcini mushrooms with softened butter and a pinch of salt and black pepper. Set aside.

Cook the Pork Chops

Season the pork chops with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork chops for about 4-5 minutes on each side or until they reach an internal temperature of 145°F (63°C).

Sauté Shishito Peppers

In the same skillet, add shishito peppers and sauté for about 3-4 minutes until they blister and are slightly tender. Remove from heat.

Prepare the Heirloom Tomato Salad

Dice the heirloom tomatoes and toss them with Thai mint leaves, a drizzle of olive oil, and salt to taste.

Serve

Place the cooked pork chops on a plate, top with porcini butter, serve the sautéed shishito peppers on the side, and add the heirloom tomato salad.
