Marinate the Meat
In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper. Add the cubed chicken, beef, lamb, or pork to the marinade. Mix well to ensure the meat is fully coated. Cover and refrigerate for at least 1 hour, or preferably overnight.

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Assemble the Souvlaki
Thread the marinated meat onto the skewers, leaving a little space between each piece for even cooking.

Grill the Skewers
Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally, until the meat is browned and cooked through. The internal temperature should reach 165°F (75°C) for chicken and 145°F (63°C) for pork, lamb, or beef.

Serve
Remove the souvlaki from the grill and let them rest for a few minutes. Serve warm with pita bread, tzatziki sauce, and a side of Greek salad.
