1. Marinate the Chicken
In a large bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
2. Grill the Chicken
Preheat a grill or char-broiler over medium-high heat. Remove the chicken from the marinade and discard any excess marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
3. Slice the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken into strips.
4. Assemble the Gyros
Warm the pita bread on the grill for about 1 minute. Place sliced chicken in the center of each pita, top with fresh vegetables, and drizzle with tzatziki sauce. Fold the pita over the filling and serve immediately.
