Prepare the Sauce

In a bowl, mix together soy sauce, rice vinegar, sugar, cornstarch, and water. Set aside.

Cook the Chicken

Heat peanut oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté Vegetables

In the same skillet, add dried red chili peppers, garlic, and ginger. Sauté for 1-2 minutes until fragrant. Add the bell pepper and zucchini and continue to cook for another 3-4 minutes.

Combine Ingredients

Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the mixture and stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens.

Garnish with chopped green onions and roasted peanuts before serving. Enjoy with steamed rice!
