Falafel Preparation
Soak the Chickpeas
Soak dried chickpeas in water overnight. Drain and rinse before use.
Make the Falafel Mixture
In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Process until a coarse mixture forms.
Form the Falafel Balls
Using your hands, form small balls or patties from the falafel mixture.

Assemble the Falafel Pita
Prepare the Pita
Warm the pita bread in a pan or oven.
Fill the Pita
Stuff the warm pita with falafel balls, lettuce, tomatoes, cucumbers, bell peppers, and onions.
Add Tzatziki
Top the fillings with a generous amount of tzatziki sauce.
