Prepare the Mixture
In a large bowl, combine the pork blood, finely chopped onion, and oatmeal. Mix well.
Add Seasonings
Add salt, black pepper, thyme, and sage to the mixture. Stir until evenly distributed.
Incorporate Pork Fat
Melt the pork fat and let it cool slightly, then add it to the mixture and stir until well combined.
Stuff the Casings
Rinse the pork casings in cold water, then carefully stuff them with the pudding mixture using a funnel or sausage stuffer.
Secure and Cook
Tie off the ends of the casings and prick them with a needle to remove air bubbles. Bring a large pot of water to a simmer and carefully lower the black pudding into the water. Cook for about 30 minutes.
Cool and Serve
Once cooked, remove the black pudding from the water and let it cool. Slice and serve, or pan-fry for a crispy exterior.
