Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it rest for 10 minutes.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

Slice the Ahi Salmon

Using a sharp knife, slice the ahi salmon fillet into thin, even pieces, about 1/4 inch thick.

Form the Nigiri

Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of ahi salmon on top of the rice.

Serve

Arrange the nigiri on a serving plate. Serve with wasabi, soy sauce, and pickled ginger on the side.
