Prepare the Mushrooms
Clean the shiitake and oyster mushrooms with a damp cloth. Remove any tough stems and slice them into bite-sized pieces.

Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add Flavorings
Stir in the thyme and season with salt and black pepper to taste. Cook for an additional 2 minutes.

Deglaze with Sherry
Pour in the oloroso sherry and let it simmer for about 2-3 minutes, allowing the alcohol to evaporate and the flavors to meld.

Finish with Parsley
Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary.

Transfer the sautéed mushrooms to a serving dish and enjoy warm as an appetizer or side dish.
