    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Cook the Beans

    In a saucepan, heat a tablespoon of olive oil over medium heat. Add the judiones de la Granja white beans and simmer for about 5 minutes. Add the diced tomatoes and let it cook for another 5 minutes until heated through.

    Sauté the Seafood

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the mussels and clams, cooking until they start to open, about 3-4 minutes. Add the shrimp and cook until pink, about 2-3 minutes. Remove from skillet and set aside.

    Cook the Fish

    In the same skillet, place the skin-on fish fillets. Season with salt and black pepper. Cook for 4-5 minutes on each side, or until the fish is cooked through and the skin is crispy.

    Combine and Serve

    On a plate, arrange the boiled potatoes, sautéed beans with tomatoes, and top with the cooked fish. Add the sautéed seafood on top and garnish with chopped scallions and a generous drizzle of Spanish salsa verde.
