    Prepare the Potatoes

    Peel and slice the potatoes into thin rounds. Heat olive oil in a pan over medium heat, add the potatoes, and cook until they are tender and golden brown. Season with salt and pepper.

    Pickle the Mushrooms

    In a saucepan, combine vinegar, sugar, and a pinch of salt. Bring to a boil, then add the mushrooms. Remove from heat and let them sit for at least 30 minutes to pickle.

    Roast the Cornish Hens

    Preheat the oven to 400°F (200°C). Rub the Cornish hens with olive oil, minced garlic, salt, pepper, and fresh herbs. Squeeze lemon juice over the hens and place lemon halves inside the cavity. Roast in the oven for about 45-50 minutes or until the internal temperature reaches 165°F (75°C).

    Prepare Tomato Confit

    In a small saucepan, combine cherry tomatoes with olive oil, salt, and pepper. Cook over low heat until the tomatoes are soft and slightly caramelized, about 20 minutes.

    Serve

    Plate the roasted Cornish hens alongside the potato confit, pickled mushrooms, and tomato confit. Drizzle with any remaining garlic-lemon sauce from the roasting pan.
