Charcutería Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Pickled Vegetables

Start by making your house-made pickled vegetables. Slice your vegetables of choice (like cucumbers, carrots, and radishes) and soak them in a mixture of vinegar, water, sugar, and salt for at least 24 hours.

  2. 2

    Prepare Chicken Liver Spread

Sauté chicken livers with onions and garlic in butter until cooked. Blend with cream, season with salt, and optionally mix in port reduction for added flavor.

  3. 3

    Arrange the Platter

On a large serving board or platter, artfully arrange the slices of Lomo Ibérico, Chorizo Ibérico, and Salchichón Ibérico. Add wedges of Manchego cheese, sections of pickled vegetables, and dollops of chicken liver spread.

  4. 4

    Add Nuts and Bread

Scatter mixed nuts around the platter and include slices of toasted bread for serving.
