    Cook the Rice

    Rinse the rice under cold water until the water runs clear. Combine the rice and vegetable broth in a pot and bring to a boil. Reduce heat to low, cover, and simmer for about 18 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.

    Prepare the Tan Tan Topping

    In a skillet, heat the sesame oil over medium heat. Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant. If using ground beef, add it to the skillet and cook until browned. For a vegan option, add the plant-based protein and cook until heated through.

    Combine Ingredients

    Stir in soy sauce, ground sesame seeds, and chili paste or sauce. Cook for another 2-3 minutes, mixing well to combine all ingredients. Adjust seasoning if necessary.

    Serve

    Fluff the cooked rice with a fork and serve in bowls. Top each bowl with the tan tan mixture, followed by chopped green onions and beni shoga.
