Prepare the Shrimp Mixture
In a food processor, blend the shrimp until smooth. Add the tapioca flour, rice flour, salt, and water. Blend until a smooth, thick batter forms.

Shape the Chips
Transfer the mixture to a large bowl. Using your hands, form small discs or flat shapes from the mixture, about 1/4 inch thick. Place them on a parchment-lined tray.

Dry the Chips
Let the shaped chips air dry in a cool, dry place for about 2 hours, or until firm to the touch.

Fry the Chips
In a deep pan, heat the vegetable oil over medium heat. Once hot, carefully fry the chips in batches, cooking until they puff up and turn golden brown, about 2-3 minutes per side.

Remove the chips from the oil and drain on paper towels. Allow to cool slightly before serving.
