    Prepare the Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions, or bring to a boil on the stove, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed.

    Once cooked, let the rice sit covered for an additional 10 minutes, then fluff with a fork.

    Mix in Seasonings

    In a small bowl, mix together the rice vinegar and salt until dissolved.

    Gently fold the vinegar mixture and Yukari seasoning into the cooked rice until evenly combined. Let the rice cool to a manageable temperature.

    Shape the Onigiri

    Wet your hands with water to prevent sticking. Take a portion of rice (about 1/4 cup) and flatten it slightly in your palm.

    Place a small amount of shiso leaves in the center, then mold the rice around it into a triangle shape. Repeat with remaining rice.

    Garnish and Serve

    If desired, sprinkle sesame seeds on top of the onigiri before serving. Enjoy your shiso onigiri as a snack or meal!
