Preparing the Potatoes

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly under cold water. Pat them dry with a towel.

    Season the Potatoes

    Prick each potato with a fork a few times to allow steam to escape. Rub olive oil over each potato, and sprinkle with salt.

    Bake

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes or until they are tender and the skin is crispy.

    Cool and Cut

    Once the potatoes are done, remove them from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato inside.

Assembling the Loaded Skins

    Prepare to Fill

    Increase the oven temperature to 450°F (230°C). Brush the insides of the potato skins with a little more olive oil and sprinkle with salt.

    Add Toppings

    Place the potato skins on a baking sheet, cut side up. Evenly distribute the shredded cheddar cheese and crumbled bacon into each potato skin.

    Bake Again

    Bake the filled potato skins in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven and top with sliced green onions. Serve hot with a side of sour cream for dipping.
