Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 10-12 minutes.
Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside. Reserve a small amount of the pasta water.
Preparing the Cajun Chicken
Mix Cajun Seasoning
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper. Mix well to create the Cajun seasoning.
Prepare Chicken
Rub the Cajun seasoning generously over both sides of the chicken breasts.
Cook Chicken
In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the seasoned chicken breasts. Cook for about 5-7 minutes on each side, until the chicken is cooked through and has a nice blackened crust. Remove from skillet and let rest for a few minutes before slicing.
Making the Alfredo Pasta
Combine Pasta and Sauce
In the same pot used for boiling the pasta, add the Alfredo sauce. If needed, add a splash of reserved pasta water to achieve desired consistency. Stir to warm through.
Toss in Pasta
Add the drained penne pasta to the Alfredo sauce and toss until well-coated.
Serving the Dish
Plate the Dish
Divide the Alfredo penne pasta among plates. Top each serving with sliced blackened chicken, diced tomatoes, and a sprinkle of fresh parsley.
Garnish
Add extra Cajun seasoning, if desired, and serve immediately.
