Prepare the Chicken
Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Chop the Vegetables
Slice the green bell pepper, zucchini, and carrot into thin strips or bite-sized pieces.
Cooking

Cook the Chicken
In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add the chicken pieces and sauté until they are cooked through and lightly browned, about 5-7 minutes. Remove them from the skillet and set aside.

Make the Curry Base
In the same skillet, add the green curry paste and stir-fry for 1-2 minutes until fragrant. Pour in the coconut milk and chicken broth, stirring to combine.

Combine Chicken and Seasonings
Return the cooked chicken to the skillet. Stir in the fish sauce, brown sugar, and lime juice. Adjust seasoning with salt and black pepper to taste. Simmer for another 2-3 minutes.

Add Spinach
Stir in the baby spinach and cook for an additional 1-2 minutes until wilted.
Serving

Serve the green curry hot, garnished with fresh basil leaves and lime wedges on the side.
