Chicken Marinade

1. Prepare the Chicken

Cut the chicken breast into bite-sized pieces and place them in a bowl.

2. Make the Marinade

In a separate bowl, mix together coconut milk, soy sauce, brown sugar, lime juice, minced garlic, grated ginger, salt, and black pepper.

3. Marinate the Chicken

Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Thai Peanut Sauce

4. Combine Ingredients

In a small saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, chili flakes, and water.

5. Cook the Sauce

Heat over medium heat, stirring continuously until the mixture is smooth and heated through. Remove from heat and set aside.

Cucumber Salad

6. Prepare the Salad

In a bowl, combine sliced cucumber, red onion, rice vinegar, sugar, and salt.

7. Mix Well

Toss the salad ingredients until well mixed. Let it sit for about 15 minutes for the flavors to meld.

8. Garnish

Before serving, sprinkle chopped cilantro on top.

Skewering and Grilling

If using wooden skewers, soak them in water for 30 minutes to prevent burning.
