Preparation

Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the warm rice and let it cool.

Prepare the Tuna

Dice the sushi grade tuna into small cubes. Set aside.

Prepare the Avocado and Mango

Slice the avocado and mango into thin strips.

Make the Soy Ginger Glaze

In a small bowl, mix soy sauce and grated ginger. Set aside.

Make the Spicy Mayo

In another bowl, mix mayonnaise and sriracha sauce to make the spicy mayo.

Assembly

Assemble the Stack

In a glass or ring mold, layer the sushi rice, followed by a layer of diced tuna, then avocado, and mango. Repeat layers until you reach the top.

Finish and Serve

Drizzle soy ginger glaze and spicy mayo over the top of the stack. Serve with seasoned prawn crackers on the side.
