Method
Preparing the Potstickers
Mix the Filling
In a large bowl, combine ground pork, ground chicken, minced ginger, minced garlic, chopped green onions, soy sauce, and sesame oil. Mix until well combined.
Fill the Wrappers
Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the filling in the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a half-moon shape, and press to seal. Repeat with remaining wrappers and filling.
Cook the Potstickers
Heat oil in a large skillet over medium heat. Add potstickers, flat side down, and fry until golden brown, about 3-4 minutes. Add a splash of water to the pan, cover, and steam for an additional 5 minutes.
Making the Pineapple Salsa
Combine Ingredients
In a bowl, mix together diced pineapple, diced red bell pepper, chopped cilantro, lime juice, and salt. Adjust seasoning to taste.
Preparing the Ginger Soy Glaze
Combine the Glaze Ingredients
In a small saucepan, combine soy sauce, grated ginger, brown sugar, and sesame oil. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat.
