Cooking the Burger
1. Prepare the Beef
Form the ground beef into 4 equal patties and season with salt and pepper.
2. Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and set aside.
3. Sauté the Mushrooms
In the same skillet, add the mushrooms and sauté until soft and browned. Set aside.
4. Cook the Patties
In the skillet, cook the beef patties over medium-high heat for about 4-5 minutes on each side, or until desired doneness.
5. Add Cheese
During the last minute of cooking, top each patty with a slice of aged white cheddar cheese and cover until melted.
Assembling the Burger
6. Prepare the Sauce
In a small bowl, mix mayonnaise with pickled mustard seeds.
7. Assemble the Burger
On each bun, spread a layer of red relish, then place the cheesy patty, followed by sautéed mushrooms, crispy bacon, and a drizzle of BBQ sauce.
8. Serve
Top with the other half of the bun and serve immediately with your favorite sides.
