Shrimp Preparation
Season the Shrimp

Pickled Red Onions
Prepare the Pickle
In a small saucepan, combine vinegar, sugar, and salt. Bring to a simmer and stir until sugar dissolves. Add sliced onions and remove from heat. Allow to pickle for at least 30 minutes.

In a small bowl, mix sour cream with hot sauce until smooth. Adjust hot sauce to taste.
Assembly
Assemble Tacos
Warm the corn tortillas. Add blackened shrimp, top with pickled red onions, corn salsa, and a drizzle of spicy sour cream. Serve with guacamole and corn chips on the side.
