Jollof Rice Preparation

Rinse the Rice
In a large bowl, rinse the long-grain parboiled rice under cold water until the water runs clear. Drain and set aside.

Cook Tomatoes
Add the blended tomatoes and tomato paste to the pot. Cook for about 10 minutes, stirring occasionally until the mixture thickens slightly.

Add Vegetables and Seasoning
Stir in the chopped bell pepper, diced carrots, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a simmer.

Add Rice
Add the rinsed rice to the pot. Stir well to combine and ensure the rice is evenly distributed in the liquid.

Cook the Rice
Cover the pot and reduce the heat to low. Cook for about 25-30 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.

Stir in the chopped cilantro, and season with salt and black pepper to taste. Cook for another 2-3 minutes.
