Preparation

    Prepare the Chicken

    Wash the chicken pieces thoroughly and pat them dry with a paper towel. Season with salt, black pepper, and half of the minced garlic and ginger. Let it marinate for at least 30 minutes.

    Blend the Tomatoes

    In a blender, combine the tomatoes, bell pepper, and remaining garlic and ginger. Blend until smooth and set aside.

    Prepare the Pumpkin Seeds

    If not already ground, grind the pumpkin seeds (Egusi) into a fine powder using a food processor or blender.

Cooking

    Cook the Chicken

    In a large pot, heat the palm oil over medium heat until it is hot but not smoking. Add the marinated chicken pieces and cook until browned on all sides, about 8-10 minutes.

    Add Vegetables

    Add the chopped onions to the pot and sauté until they are translucent. Then, add the blended tomato and pepper mixture and cook for another 10 minutes, stirring occasionally.

    Add Pumpkin Seeds

    Stir in the ground pumpkin seeds (Egusi) and thyme. Add enough water to achieve your desired consistency for the stew. Season with salt, black pepper, and chili powder to taste. Let it simmer for 20-25 minutes.

    Finish with Spinach

    Add the chopped spinach or leafy vegetable to the pot and stir well. Cook for an additional 5 minutes until the spinach is wilted and tender.

    Serve

    Remove the stew from heat and serve hot with rice, fufu, or your choice of side.
