Cooking Quinoa

Rinse and Cook Quinoa

Rinse 1 cup of quinoa under cold water to remove any bitterness. In a pot, bring 2 cups of vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

Chop Vegetables

While the quinoa is cooking, chop the red bell pepper, zucchini, and carrot into bite-sized pieces. Rinse and dry the spinach leaves.

Sauté Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables (red bell pepper, zucchini, carrot) and sauté for about 5-7 minutes until they are tender. Add the spinach and cook until wilted.

Mix Everything Together

Once the quinoa is cooked and the vegetables are sautéed, add the quinoa to the skillet with the vegetables. Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of cumin, 0.5 teaspoon of salt, 0.5 teaspoon of black pepper, and 2 tablespoons of lemon juice. Stir well to combine all the ingredients.
