Skillet Seared Fajitas Recipe

Mexican black beans, Jack & cheddar cheeses, romaine, pico de gallo, guacamole, cilantro-lime sour cream, flour or corn tortillas. Choose from Marinated Carne Asada, Marinated Chicken Breast or Shrimp, Chile-Seasoned Ribeye.

    Prepare the Meat

    If using carne asada, chicken, or ribeye, marinate the meat for at least 30 minutes with your choice of spices. If using shrimp, season with salt and pepper.

    Cook the Meat

    In a large skillet over medium-high heat, add 1 tablespoon of oil. Once hot, add the marinated meat or shrimp. Cook for about 5-7 minutes, or until cooked through and nicely seared. Remove from skillet and let rest.

    Heat the Beans

    In the same skillet, add the black beans and heat through for about 2-3 minutes. Stir occasionally.

    Assemble the Fajitas

    Warm the tortillas in a dry skillet or microwave. Slice the cooked meat and layer it on the tortillas with black beans, chopped romaine, pico de gallo, guacamole, and shredded cheeses.

    Serve

    Top with cilantro-lime sour cream and serve immediately with extra lime wedges on the side.
