Fried Ice Cream Directions
- 1
Prepare the Ice Cream
Scoop the vanilla ice cream into 4 equal balls and place them on a baking sheet. Freeze for at least 2 hours to ensure they are firm.
- 2
Prepare the Coating
In a large bowl, crush the cornflakes and mix in the shredded coconut, sugar, and cinnamon. In another bowl, whisk together the eggs and milk.
- 3
Coat the Ice Cream Balls
Take the frozen ice cream balls and dip them into the flour, then into the egg mixture, and finally coat them in the cornflake and coconut mixture. Repeat this process to double coat each ball.
- 4
Freeze Again
Place the coated ice cream balls back in the freezer for at least 1 hour to firm up.
- 5
Fry the Ice Cream
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry each ice cream ball for about 10-15 seconds or until golden brown. Remove and drain on paper towels.
- 6
Serve
Drizzle with dulce de leche, top with whipped cream, and serve immediately while still crunchy on the outside and cold on the inside.
