    Prepare the Birria

    If not using pre-cooked birria, cook the beef with spices, onions, and garlic until tender. Shred the meat and reserve the broth.

    Roast the Poblanos

    Roast the poblanos over an open flame until the skin is charred. Place in a bag for a few minutes, then peel off the skin. Slice the poblanos into strips.

    Assemble the Quesabirria

    Heat a skillet over medium heat. Place a corn tortilla in the skillet, sprinkle with Monterey Jack cheese, add a portion of shredded beef birria, roasted poblanos, and chopped onions. Top with another tortilla.

    Cook the Quesabirria

    Cook until the bottom tortilla is golden brown and crispy, then flip and cook the other side until golden brown and the cheese is melted.

    Serve with Jus

    Serve hot with a side of birria jus for dipping.
