Prepare the Filling
In a large bowl, combine the Monterey Jack cheese, guacamole, toasted pepitas, and pico de gallo. Mix well until all ingredients are evenly distributed.

Assemble the Quesadilla
Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Place one tortilla in the skillet, then spread half of the cheese and guacamole mixture over one half of the tortilla. Fold the tortilla in half and cook for 3-4 minutes until the cheese begins to melt and the tortilla is golden brown.

Cook the Other Side
Carefully flip the quesadilla and add the remaining tablespoon of olive oil if necessary. Cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.

Repeat and Serve
Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges. Repeat the process with remaining tortillas and filling. Serve with garlic crema and cilantro-lime sour cream on the side.
