    Marinate the Carne Asada

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the carne asada or ribeye and marinate for at least 30 minutes or overnight for best flavor.

    Prepare the Vegetables

    While the meat is marinating, prepare the corn, leeks, and bell peppers. For the corn, remove the husks and silk. Slice the leeks and cut the bell peppers into halves or quarters.

    Grill the Carne Asada

    Preheat the grill to medium-high heat. Grill the marinated carne asada for about 5-7 minutes on each side or until desired doneness is achieved. Remove from grill and let rest for a few minutes before slicing.

    Grill the Vegetables

    On the grill, add the corn, leeks, and bell peppers. Grill the corn for about 10 minutes, turning occasionally, until charred. Grill the leeks and bell peppers for about 5-7 minutes until tender and slightly charred.

    Slice the carne asada and serve with grilled vegetables, black beans, rice, and top with crumbled cotija cheese and fresh cilantro.
