    In a mixing bowl, combine the shredded chicken with black bean queso. Season with salt to taste, and mix well.

    In a large, deep skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

    Assemble the Tacos

    Take a corn tortilla, add a generous amount of the chicken and queso mixture in the center, then fold the tortilla in half to form a taco.

    Fry the Tacos

    Carefully place the folded tacos into the hot oil, a few at a time, and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Serve the fried tacos topped with shredded lettuce, pico de gallo, a drizzle of serrano vinaigrette, salsa Maya, and chimichurri mayo.
