    Prepare the Parsnips

    Peel and chop the parsnips into small pieces. Boil them in salted water until tender, about 15-20 minutes.

    Drain the parsnips and mash them in a bowl. Add grated pecorino and gruyere cheese, flour, egg, salt, and black pepper. Mix until combined.
