Preparation Steps

Prepare Hibiscus Syrup
In a saucepan, combine dried hibiscus flowers, sugar, and water. Bring to a boil over medium heat, stirring until sugar dissolves. Reduce heat and let it simmer for 10 minutes. Strain the mixture and set aside.

Infuse Bay Leaves
In a separate small pot, add the rose verjus and bay leaves. Heat gently for about 5 minutes to infuse the flavors, being careful not to boil.

Combine Ingredients
In a large mixing bowl, combine the strained hibiscus syrup, infused rose verjus, and fresh raspberries. Gently mash the raspberries to release their juices.

Mix with Dry Wit Bruce
Pour the mixture into a pitcher and add the dry wit bruce. Stir gently to combine all the flavors.

Serve
Pour the Pachamama into glasses over ice and garnish with a few whole raspberries and a bay leaf if desired.
