Method
Prepare Miso Glaze
Make the Miso Glaze
In a small bowl, whisk together the miso paste, mirin, sugar, and soy sauce until smooth.
Prepare Sablefish
Marinate the Sablefish
Preheat the oven to 400°F (200°C). Place the sablefish fillets in a baking dish and coat them with the miso glaze. Let marinate for 20 minutes.
Bake the Sablefish
Bake in the preheated oven for 12-15 minutes until the fish is cooked through and flakes easily with a fork.
Prepare Sushi Rice
Cook Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.
Season the Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the rice until well combined.
Prepare Vegetables
Prepare Dashi Broth
Heat Dashi
In a saucepan, heat the dashi stock until warm. Keep warm until ready to serve.
Assemble the Dish
Plate the Dish
On each plate, place a serving of warm sushi rice, top with miso-glazed sablefish, arrange sautéed Tokyo turnips and blanched yu choy, and ladle warm dashi broth around the plate.
