Preparation
Prepare the Fish
Pat the striped bass fillets dry with paper towels. Season both sides with salt and ground black pepper.
Prepare the Vegetables
Trim the ends of the yu choy and rinse under cold water. Slice the oyster mushrooms into strips.
Cooking
Cook the Fish
In a large skillet, heat olive oil over medium-high heat. Once hot, place the striped bass fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy and golden brown. Flip the fillets and cook for an additional 2-3 minutes until the fish is cooked through. Remove from the skillet and keep warm.
Plate and Serve
On a serving plate, arrange the sautéed yu choy and oyster mushrooms. Place the crispy striped bass fillet on top and drizzle with cured pork XO sauce. Serve immediately.
