Prepare the Garlic Aioli
1. Make the Aioli
In a bowl, mix together mayonnaise, minced garlic, lemon juice, and salt until well combined. Set aside.
Cook the Shrimp and Peppers
2. Sear the Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the shrimp with salt, black pepper, and espelette pepper. Once the oil is hot, add the shrimp and cook for 2-3 minutes on each side until they are opaque and cooked through. Remove and set aside.
3. Blister the Peppers
In the same skillet, add 1 tablespoon of olive oil and the shishito peppers. Cook for about 5-7 minutes, tossing occasionally, until the peppers are blistered and slightly charred. Season with sea salt.
Serve the Dish
4. Plate and Garnish
On a serving platter, arrange the seared shrimp and blistered shishito peppers. Serve with garlic aioli on the side and lemon wedges for squeezing over the top.
