Method
Pork Belly Preparation
Season the Pork Belly
Rub the pork belly with salt and black pepper. Let it sit at room temperature for about 30 minutes.
Preheat the Grill
Preheat your grill to medium-high heat.
Cooking
Grill the Pork Belly
Place the pork belly on the grill, skin side down, and cook for about 15-20 minutes, then flip and cook for another 15-20 minutes until nicely charred and cooked through.
Apply Ssamjang Glaze
During the last 5 minutes of cooking, brush the ssamjang glaze on the pork belly generously, allowing it to caramelize slightly.
Finishing Touches
Toast Sesame Seeds
In a small pan, toast sesame seeds over medium heat until golden brown, about 3-5 minutes. Stir frequently to prevent burning.
Serve
Remove the pork belly from the grill, let it rest for 5 minutes, then slice and sprinkle with toasted sesame seeds before serving.
