Prepare the Batter

In a mixing bowl, combine chickpea flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Mix well. Gradually add water to make a smooth batter that can coat the back of a spoon.

Add Vegetables

Fold in the chopped cabbage, sliced onion, grated ginger, and minced garlic into the batter until well combined.

Heat the Oil

In a deep frying pan, heat oil over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; if it sizzles and rises to the surface, the oil is ready.

Fry the Pakoras

Using a spoon, drop small portions of the batter-coated vegetables into the hot oil. Fry in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Serve

Serve hot with jalapeño sauce or your favorite chutney.
