Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash and scrub the potatoes, then cut them into wedges or cubes. Place them in a bowl and toss with olive oil, salt, and black pepper until evenly coated.

Bake the Potatoes

Spread the potatoes on a baking sheet in a single layer. Bake for about 30-35 minutes, flipping halfway through, until they are golden brown and crispy.

Make the Chimichurri

While the potatoes are baking, prepare the chimichurri. In a food processor, combine parsley, cilantro, garlic, red wine vinegar, and red pepper flakes. Pulse until finely chopped. Drizzle in olive oil while processing until the desired consistency is reached. Season with salt to taste.

Serve

Once the potatoes are crispy, remove them from the oven. Serve hot, drizzled with chimichurri and a dollop of crème fraîche on the side.
