1. Prepare the Tofu
Press the tofu to remove excess moisture. Cut it into small cubes.
2. Cook the Tofu
In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
3. Scramble the Eggs
In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble them until fully cooked. Remove from the skillet and set aside.
4. Sauté the Vegetables
Add the seasonal vegetables and sliced jalapeño to the skillet. Sauté until they are tender, about 3-4 minutes.
5. Combine Ingredients
Add the cooked rice to the skillet with the vegetables. Stir in the tofu, scrambled eggs, soy sauce, chili crisp, salt, and pepper. Cook for an additional 2-3 minutes, stirring frequently.
6. Finish and Serve
Sprinkle sesame seeds and fresh cilantro over the fried rice before serving. Enjoy your delicious fried rice!
