Prepare the Zucchini
Wash and slice the zucchini into thin rounds, about 1/4 inch thick.
Make the Batter
In a bowl, whisk together the flour, cornstarch, salt, and black pepper. In another bowl, beat the eggs and milk together. Gradually add the egg mixture to the dry ingredients, mixing until smooth.
Add Cheese
Fold in the grated Parmesan cheese into the batter until evenly incorporated.
Heat the Oil
In a large skillet or deep fryer, heat the olive oil over medium-high heat until shimmering.
Fry the Zucchini
Dip each zucchini slice into the batter, allowing the excess to drip off, then carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 2-3 minutes per side.
Drain and Serve
Use a slotted spoon to transfer the fried zucchini to a paper towel-lined plate to drain excess oil. Serve hot, garnished with extra Parmesan cheese if desired.
