Method
Prepare the Sponge Base
Preheat the Oven
Preheat your oven to 350°F (175°C).
Bake
Pour the batter into a greased cake pan and bake for 20-25 minutes, or until a toothpick comes out clean. Allow to cool completely.
Make the Dark Chocolate Mousse
Melt the Chocolate
Melt 200g of dark chocolate in a heatproof bowl over simmering water until smooth. Allow to cool slightly.
Whip Cream
In a separate bowl, whip 1 cup of heavy cream until soft peaks form.
Fold Together
Gently fold the melted chocolate into the whipped cream, then fold in the egg whites until fully incorporated. Pour over the sponge base and refrigerate until set.
Make the White Chocolate Mousse
Melt the White Chocolate
Melt 200g of white chocolate in a heatproof bowl over simmering water until smooth. Allow to cool slightly.
Whip Cream
In a separate bowl, whip 1 cup of heavy cream until soft peaks form.
Fold Together
Gently fold the melted white chocolate into the whipped cream, then fold in the egg whites until fully incorporated. Pour over the dark chocolate mousse layer and refrigerate until set.
Prepare the Chocolate Coating
Melt Dark Chocolate
Melt 100g of dark chocolate and pour it over the set mousse layers, spreading evenly to coat.
Serve
Garnish
Top with white chocolate shavings just before serving. Slice and enjoy your Three Chocolate Mousse!
