    Make the Choux Pastry

    In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until a smooth dough forms.

    Add Eggs

    Let the mixture cool slightly, then add eggs one at a time, mixing well after each addition until the dough is glossy and holds its shape.

    Pipe the Dough

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Transfer the dough to a piping bag and pipe small mounds (about 1 inch in diameter) onto the baking sheet.

    Bake the Profiteroles

    Bake for 20-25 minutes or until puffed and golden brown. Do not open the oven door during baking. Once done, remove and let cool on a wire rack.

    Prepare the Vanilla Cream

    In a mixing bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.

    Prepare the Chocolate Ganache

    In a small saucepan, heat milk until just simmering. Pour over chopped chocolate in a bowl and let sit for a minute. Stir until smooth to create ganache.

    Fill the Profiteroles

    Once the choux pastry shells are cool, slice the tops off and fill with vanilla cream. Replace the tops.

    Serve

    Drizzle the chocolate ganache over the filled profiteroles and serve immediately.
