Preparation Steps
- 1
Prepare the Sponge Cake Base
Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan. In a mixing bowl, combine 150g of granulated sugar with 4 large eggs and beat until fluffy. Gradually add 150g of all-purpose flour and mix until smooth. Pour the batter into the prepared pan and bake for 20-25 minutes. Let it cool.
- 2
Make the Cheesecake Filling
In a large mixing bowl, beat 600g of cream cheese with 200g of granulated sugar until smooth and creamy. Add 250ml of sour cream and 2 tsp of vanilla extract, mixing until well combined. Add 4 eggs one at a time, mixing gently after each addition. Finally, fold in 2 tbs of all-purpose flour.
- 3
Combine and Bake
Pour the cheesecake filling over the cooled sponge cake base in the springform pan. Bake in a water bath at 325°F (160°C) for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for about 1 hour.
- 4
Chill and Serve
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Before serving, remove the sides of the springform pan and slice the cheesecake.
