    Prepare the Limoncello Heart

    In a small bowl, combine the limoncello and lemon zest. Freeze until solid, about 2 hours.

    Scoop the Gelato

    Scoop the lemon gelato into balls and create a small indentation in the center of each scoop. Place a frozen limoncello heart in the center of each scoop, then reshape the gelato around it. Freeze again until firm, about 1 hour.

    Make the Meringue

    In a clean mixing bowl, beat the egg whites and a pinch of salt until soft peaks form. Gradually add the granulated sugar and cream of tartar, continuing to beat until stiff peaks form and the mixture is glossy.

    Coat the Gelato

    Remove the gelato from the freezer and dip each scoop into the meringue mixture, ensuring it is fully coated. Place the meringue-coated gelato on a baking sheet lined with parchment paper.

    Bake the Truffles

    Preheat the oven to 350°F (175°C). Bake the meringue-coated gelato for about 5-7 minutes, or until the meringue is lightly toasted. Watch carefully to avoid burning.
