    Make the Short Pastry

    In a mixing bowl, combine flour, sugar, and softened butter. Mix until crumbly. Add egg yolks and mix until dough forms. Wrap in plastic and chill for 30 minutes.

    Prepare the Pastry Cream

    In a saucepan, heat milk until hot but not boiling. In a separate bowl, whisk together egg yolks, sugar, cornstarch, lemon zest, and vanilla. Gradually whisk hot milk into egg mixture. Return to saucepan and cook over medium heat, stirring constantly until thickened. Remove from heat and let cool.

    Bake the Short Pastry Base

    Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a tart pan. Prick the base with a fork and bake for 15-20 minutes until golden. Let cool.

    Assemble the Cake

    Spread the cooled pastry cream over the baked short pastry. Top with pine nuts and sliced almonds, pressing them gently into the cream.

    Finish and Serve

    Dust the top with powdered sugar before serving. Chill for at least 1 hour before slicing.
