Prepare the Mushrooms
Preheat the oven to 375°F (190°C). Clean the portabella mushrooms and remove the stems. Place them on a baking sheet, gill-side up.

Sauté the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add fresh spinach and roasted red peppers, cooking until spinach is wilted. Season with salt and black pepper.

Mix in Cheese
Remove the skillet from heat and mix in crumbled goat cheese until well combined.

Stuff the Mushrooms
Spoon the filling evenly into each portabella mushroom cap.

Bake
Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is heated through.
